warm salsa Sheese dip


1/4 wheel of strong cheddar Sheese
150g of soft tofu - drained
1 large ripe tomato
1 small cooking onion
2 cloves of garlic
1 tbs. of chopped cilantro
1 fresh jalapeno pepper
1 ts. lime juice
1/2 ts. Mexican chili powder
salt to taste
1 ts. olive oil

Preheat oven to 400F. Baste a 1/4 L chaffing dish or other oven-safe dish with pure olive.  In a medium sized bowl grate Sheese and fork whip in soft tofu.  Chop together cored and seeded jalapeno, garlic and cilantro – add to tofu-Sheese mixtures. Add lime juice, chili powder and salt – mix well. Finely dice tomatoes and onions and stir into mixture. Pour into olive-oiled dish, smooth the top and bake at 400F for about 20 min (or until bubbly all over). Serve with your favourite chips or flatbreads – makes a perfect appetiser or snack for two.
