blue Sheese dressing

1/3 wheel blue Sheese
1/2 cup dry white wine
1/4 cup water
2 tbs. olive or grapeseed oil
2 tbs. rice or white wine vinegar
2 cloves of peeled garlic
1 ts. of dried thyme leaves
1/2 ts. ground black pepper
1/4 ts. sea salt

Crumble 2/3 of Sheese and add to a blender with all other ingredients. Blend on high until smooth and pour into a glass oil or vinegar bottle. (clean, empty and sieve removed). Crumble in remaining blue Sheese for chunks.

(Without a blender, grate or press the garlic, crumble the Sheese and add all ingredients to the bottle. Shake like mad until desired chunkiness is reached).

Keep in the fridge and remove 10 min before serving. Always shake well. Great with baby greens, spinach, or on salads containing fruit or nuts. The one pictured is romaine with candied walnuts and shaved pears. Dresses 6 - 8 salads.
