Scalloped potatoes

8 med. sized potatoes
2 large cooking onions
2 cloves of grated or pressed garlic
2 cups soy milk
1/4 tsp. sea salt
1/2 tsp. dried mustard powder
1/4 tsp. ground black pepper
1/4 tsp.dry or 1 tsp of fresh chopped thyme leaves
1/4 wheel of Gouda style Sheese
1/4 wheel of Mozzarella style Sheese (or choose your 2 favourites)
3 slices of whole grain rye bread (optional)

Preheat oven to 350F.

Thinly slice the potatoes & onions, layer in a large greased casserole dish, sprinkling
salt & pepper on each layer, alternating the potatoes & onions.

Grate Sheese, dice bread, mix and set aside.

In a cup or bowl mix soy milk, garlic and spices. Pour mixture over potatoes & bake
for 1 hour.

Top with Sheese and/or bread mixture - broil on a low rack for 12min.
