world's best scrambled tofu


1/8 wheel grated strong cheddar Sheese
454g medium firm tofu
1 large chopped peeled garlic clove
2 tbs. chopped fresh parsley
1 chopped green onion
3 tbs. beer (lager or ale)
1 ts. baking powder
1/8 ts. turmeric
1/8 ts. sea salt
1/8 ts. black pepper
(optional) 1 ts. finely chpped fresh jalapeno pepper
grape seed or other oil for cooking

Drain tofu and add to a large mixing bowl. Add all other ingredients, mix well but leave some small chunks of tofu. Drizzle 1 tbs of oil evenly onto a frying pan and warm on medium heat. Spread tofu evenly onto hot frying pan. Allow to simmer without stirring or flipping until excess moisture has evaporated (about 15min). With a spatula lift tofu and flip in small sections to keep consistency. Cook another 5min. and serve with warmed tomato wedges and toast. Makes 2-3 breakfasts.
