salad caprese


Salad:
2 pints fresh cherry or grape tomatoes
1/4 cup (approx. 4 sprigs) fresh basil
1/4 cup fresh Italian parsley
1/3 wheel of Mozzarella style Sheese

Cut tomatoes in half cross-wise and add to a medium-sized salad bowl. Chop the basil finely and add to the tomatoes. Finely dice and add the Sheese. Stir them in & set aside to make the vinaigrette.

Vinaigrette:
1 large peeled clove of garlic
1/4 tsp. whole pepper corns
1/4 tsp. sea salt
2 tbs. olive oil*
2 tbs. balsamic vinegar*
*OR
1 tbs. olive oil
1 tbs. balsamic vinegar
2 tbs. dry red wine

In a blender or cup (for hand blending) add all ingredients and blend on high. Alternatively, you may crush or grate the garlic and use freshly ground pepper. Whisk together all ingredients thoroughly. Pour over the salad, mix it well, and set aside for 15min to marinate prior to serving either as a side, or with your favourite bread. Serves 4.
